Dairy-Free Ice-Cream Cake

1 ½ cup frozen blueberries

3 pints almond So Delicious vanilla frozen dessert, room temperature

1 pint Talenti Roman Raspberry

13 So Delicious Dairy Free Vanilla Sandwiches

 1 can full-fat coconut milk, chilled in the refrigerator for 12 hours

2 Tablespoons crushed almonds

2 Tablespoons fresh or frozen blueberries

2 Tablespoons frozen cherries

2 Tablespoons balsamic vinegar glaze (optional, you can use melted dark chocolate instead)

8 vegan coconut raffaellos (optional)

2Allow one can of full-fat coconut milk to chill in the refrigerator for 12 hours. Don’t move it!unnamed

Gently open the can and scoop out the thick coconut cream. cakesWhip it until fluffy! Set aside.cakess

Place blueberries and 1.5 pint almond frozen dessert in a strong blender and process until smooth.hghghghg

ghghghAssemble the ice-cream sandwiches in a 9 or 10-inch springform pan.

Spoon the purple layer. Freeze for 10 minutes.

Remove from the freezer and spread the 1.5 pint almond frozen dessert on top.ytytuuu

Freeze for 10 minutes.

Remove from the freezer and cover the white layer with red Roman raspberry gelato.hgfyuyu

Freeze for 10 minutes.

Remove from the freezer and add coconut cream for the top.

Sprinkle with crushed almonds and blueberries. Decorate with vegan coconut bowls (optional) frozen cherries and drizzle with balsamic vinegar glaze or melted dark chocolate.trgfgfgf

Freeze overnight.

Let it sit in a room temperature for 15-20 minutes before serving!uiuii
