Spicy Kale Salad with Crispy Chickpeas

Serves 4


8 cups kale, chopped

4 tablespoons Hampton Creek Vegan Mayo Sriracha flavor

½ cup Crunchy Chickpeas ( I used Saffron Road brand )

1 tablespoon peanut butter, unsweetened

2 tablespoons cold-pressed sunflower oil

Pinch fine pink sea salt

Pinch garlic powder


In a deep large pot mix all ingredients, except the chickpeas. Massage, using your hands for  2 minutes.

Sprinkle with crispy garbanzo beans, and serve immediately!
