Ingredients

  • 1 small green cabbage
  • 3 Tbsp olive oil
  • 1 large onion, sliced thin
  • ½ pound (about 225g) portabella mushrooms, chopped into small pieces
  • 4 large garlic cloves, minced
  • 3 Tbsp vegan mayo
  • 2 Tbsp nutritional yeast, (optional, but highly recommended for added flavor)
  • Salt and freshly ground black pepper, to taste
  • 1 sheet puff pastry, defrosted

Instructions

  • Begin by cutting the small green cabbage in half. Remove and discard the core, then thinly shred the cabbage into fine slices. Set it aside.
  • Heat a large pan over medium-high heat and add the olive oil. Let it heat up until it shimmers. Add the thinly sliced onions and the chopped portabella mushrooms. Sauté them for about 2-3 minutes, stirring frequently with a wooden spoon. Continue cooking until the mushrooms release their moisture and the onions become soft and translucent.
  • Stir in the minced garlic cloves and continue to sauté for an additional 1-2 minutes. The garlic should become fragrant, but be careful not to let it brown.
  • Reduce the heat to low, and stir in the vegan mayonnaise and nutritional yeast (if using). These ingredients add depth of flavor and creaminess to your filling. Season with salt and freshly ground black pepper to taste. Mix everything thoroughly until well combined. Remove the pan from heat.
  • Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). While the oven is heating up, prepare your puff pastry.
