- 1 small cucumber, peeled peeled
- 2 bundles somen noodles
- 2 cups baby lettuce, washed washed
- For the dressing:
- 2 Tbsp low sodium soy sauce
- 2 Tbsp water
- 1 Tbsp rice vinegar
- 2 tsp maple syrup
- 2 tsp fresh ginger, minced
- ½ tsp sesame oil
Peel the flesh of cucumber lengthwise, using a little pressure to make thin ribbons. Set aside.
In a small bowl, whisk all ingredients for the dressing and set aside.
Bling medium pot of water to boil. Add somen noodles and cook for 1 minute. Carefully drain, then rinse them with cold water to stop cooking.
Assemble the bowl with noodles, baby lettuce, cucumber ribbons, and dressing. Enjoy immediately!
