Asian Beefless Seitan with Noodles

In a small bowl, combine all ingredients for the sauce. Whisk well and set aside.
Prepare the noodles according to package directions. Drain them well and set aside.
Add canola oil and seitan to a large skillet. Sauté for 2 minutes, until the seitan becomes golden brown on all sides.
Add fresh ginger, minced garlic, and chopped shallot. Cook for 1 more minute,constantly stirring.
Pour on the sauce, mix well and sauté for 1 more minute. Toss in noodles and sprinkle with sesame seeds. Serve immediately, drizzle with more soy sauce if needed.
