For the red layer: In the same blender (no need to rinse it out), add fresh raspberries, cranberries, maple syrup, dates, milk, and peppermint extract. Blend until you achieve a vivid red mixture that's both intensely sweet and tart, perfectly complementing the mellow vanilla white layer.
