Fall and Winter can be a busy time for people considering the upcoming back-to-back holidays that will consume our lives. In between work, self-care, and family, it can seem as if there is not “enough time” to get through your usual schedule. Cooking can be one of those tasks that get pushed to the side with the convenience of microwavable food. But, life happens, and we have to continue to nourish our bodies with nutritious food. Whether you are cooking a meal from scratch or preparing a 3 min microwaveable meal, there is still room to keep your food choices healthy and low in calories.

The holidays can also get very expensive! In between shopping for the perfect gifts, starting holiday vacations and decorating the house, you may be looking for a break from opening up your wallet and swiping your card! This guide will help you save some money, make time for the holidays, while still maintaining a healthy diet. You can even bring some of these goodies to holiday parties as gifts!

Luckily the fall and wintertime call for many soups, stews, baked goods and warm dishes that may require re-heat via stovetop or microwave. Unlike the summer season, it’s not HOT outside! Very comforting vegan chicken soup! This is my go-to soup for when I’m feeling sick. It is easy to pop open and heat up in the microwave when one needs comfort. I like to keep a few cans stocked in my pantry!

It is made from scratch with organic tofu, carrots, celery, leeks, onions, noodles, and spices! This soup is similar in flavor and textures to a traditional chicken noodles soup!

Amy’s Tofu Scramble is a deliciously easy breakfast option! It has natural ingredients such as tofu, potatoes, onions, spinach, zucchini, mushrooms, and carrots. This healthy breakfast is also high in protein and low on carbs!

My personal favorites are fishless filets! They have a delicate, not fishy taste similar to fried breaded Codfish. They have a nicer flaky and crunchier consistency if you cook them in the oven or toaster. Just squeeze the lemon and enjoy on tacos or with baked french fries.

Gardein Plant-Based Chick’n Scaloppini

So good, tastes just like chicken, without taking a chicken!! Ready in 5 minutes, these lightly seasoned plant-based cutlets contain 11 grams of protein per serving!

Perfect for an easy, everyday meat alternative or occasional vegan substitute.
Just cook it with a little oil in a pan, on lower heat, covered. Then flip it over and cook the other side.

Healthy food, fast, and convenience are words that you typically do not see in a sentence when talking about food. Luckily, we live in a time where you can make healthy meals, save time, and save money! There is always a more accessible and healthier way, and this guide is a great start. If you are in a rut, make sure to check out the frozen food section of your grocery store. Many other options can be chosen, such as frozen vegetables, pizzas, and burritos. Leftovers are also an easy way to prepare food! So, consider making big meals on the weekend and stretch them throughout the week. Who doesn’t like to save money and time at the end of the year!
