Easy Loaded Miso Soup

I absolutely love loaded miso soups. Miso paste has a rich, mushroomy umami flavor that brings all ingredients together in one flavorful comforting bowl of soup. 

For today’s version I made my miso soup with vegetable potstickers, seaweed,  and baby bok choy.  Sprinkled with sesame seeds and scallions to make that first bite pop!

  • In a small pot, bring water to boil. Add miso paste and potstickers.
  • Reduce heat and simmer for 5 minutes. 
  • Add the rest of the ingredients and simmer for 1 more minute. Enjoy!
