Chilled European Summer Soup

This Chilled European Spring Soup is one of my favorites for many years. Although this recipe sounds a little bit strange, it is very flavorful, aromatic, and light. The zesty radishes paired with crunchy cucumbers and probiotic drink, Kombucha, give this fine meal a very refreshing taste. Give it a try, you wouldn’t regret it!!

Ingredients

  • 1/3 cup macadamia nut or almond milk
  • 1 Tbsp lemon juice
  • 1/3 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup canned garbanzo beans, water drained, rinsed
  • 1 small cucumber, sliced very thin
  • 2 radishes, sliced very thin
  • 1/4 cup canned sweet peas, water drained, rinsed
  • 1 cup Kombucha, plain unsweetened
  • 1 Tbsp fresh scallions, chopped very fine
  • 1 Tbsp fresh dill, chopped very fine

Instructions

  • Using a whisk, mix milk with lemon juice, salt, and black pepper.
  • Next, add garbanzo beans, cucumber, radishes, sweet peas and mix well.
  • Gently pour Kombucha over the soup. Sprinkle with fresh scallions and dill. Add more pepper and salt if needed. Cold Spring (or summer) soup is ready to serve!
