Vegan Blueberry Nog

Who is ready for a cozy winter night with a warm vegan blueberry nog mug? Yes, you read it right! Traditionally, eggnog is made with whole milk, cream, sugar, spices, and…eggs. But I always like implementing innovative new ideas! My homemade eggnog is free of animal products, dairy-free, and an egg-free alternative to a traditional drink. It’s creamy and unusually blue, a.k.a conversation piece, perfect for holiday gatherings! It resembles a traditional recipe in taste and is spiced with the season’s stars, nutmeg, and cinnamon.

Ingredients

  • 1 cup blueberries, fresh
  • 2 Tbsp maple syrup
  • 3 cups almond milk
  • 1/2 tsp ground nutmeg
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • 1/4 tsp ground cinnamon
  • Non-dairy whipped cream, (optional, for topping)
  • Natural blue food coloring (optional)*
  • Additional cinnamon (for sprinkling)

Instructions

  • Preheat medium pot over low heat. Stir in fresh blueberries with maple syrup.
  • Cook them over medium-low heat for 2 minutes, stirring frequently.
  • Add 2 cups oat milk, ground nutmeg, vanilla extract, salt, and cinnamon. Just warm up the eggnog for a few minutes until the mixture simmers. Don’t overheat it and whisk constantly.
  • Strain the drink from the berry pieces. Stir in 1 cup of cold milk, then slowly pour the mixture into the glass. Top with whipped cream, and sprinkle with a little cinnamon. Enjoy!

Notes

* If you want your drink to stand out more, you can add a drop of blue food coloring.
